Ingredients
  • 250 g (1 cup) softened butter
  • 150 g (¾ cup) sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 300 g (2½ cups) all-purpose flour
  • 100 g (1 cup) dried cranberries, chopped
  • Icing sugar for dusting
Steps
  1. Heat the oven to 180°C (350°F) and line two baking sheets with parchment.
  2. Beat the butter and sugar until pale and fluffy, then beat in the egg and vanilla.
  3. Stir in the flour and cranberries until a soft dough forms.
  4. Roll out to ½ cm (¼ in) thick and cut out stars. Kids are great at this part.
  5. Bake 10–12 minutes until the edges are just golden. Cool, then dust with icing sugar.

Easy gingerbread people

Ingredients
  • 350 g (3 cups) all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger, 1 tsp cinnamon
  • 125 g (½ cup) cold butter, cubed
  • 175 g (¾ cup) brown sugar
  • 1 egg
  • 4 tbsp golden syrup or molasses
  • Raisins and icing pens for decorating
Steps
  1. Heat the oven to 180°C (350°F). Rub the butter into the flour, soda and spices until it looks like crumbs.
  2. Stir in the sugar, then the egg and syrup, and bring together into a dough.
  3. Roll out and cut out people. Place on lined baking sheets.
  4. Bake 10–12 minutes, then cool completely.
  5. Decorate with raisins and icing — the sillier the faces, the better.

Easy Christmas Dinner

Cozy maple-roasted chicken dinner

Ingredients
  • 8 chicken thighs, bone-in
  • 1 kg baby potatoes, halved
  • 4 carrots, cut into chunks
  • 2 red onions, quartered
  • 3 tbsp olive oil
  • 3 tbsp maple syrup
  • 2 tbsp wholegrain mustard
  • Salt, pepper and a few sprigs of thyme
Steps
  1. Heat the oven to 200°C (400°F).
  2. Toss the vegetables with oil, salt and pepper in a large roasting pan.
  3. Nestle the chicken on top. Whisk the maple syrup and mustard and brush over the chicken.
  4. Roast 50–55 minutes, until the chicken is cooked through and the potatoes are golden.
  5. Rest 5 minutes, scatter with thyme, and serve straight from the pan.

Easy Christmas Dinner

One-pan festive pasta

Ingredients
  • 400 g pasta
  • 1 jar (about 650 ml) tomato pasta sauce
  • 750 ml (3 cups) vegetable stock
  • 200 g baby spinach
  • 100 g cream cheese or ricotta
  • Grated parmesan, basil, salt and pepper
Steps
  1. Put the pasta, sauce and stock in a large deep pan and bring to a simmer.
  2. Cook 12–14 minutes, stirring often, until the pasta is tender.
  3. Stir in the spinach and cream cheese until creamy and wilted.
  4. Season, top with parmesan and basil, and serve.

Snow-day cocoa board

  • 1 L (4 cups) milk of your choice
  • 4 tbsp cocoa powder
  • 2 tbsp sugar or maple syrup
  • Mini marshmallows
  • Whipped cream
  • Candy canes and chocolate shavings for topping
Steps
  1. Warm the milk in a saucepan over medium heat — steaming, not boiling.
  2. Whisk in the cocoa and sugar until smooth.
  3. Pour into mugs and set out the toppings in little bowls.
  4. Let everyone build their own cocoa. Adults handle the hot pan.

No-bake reindeer bites

Ingredients
  • 200 g pitted dates
  • 150 g (1½ cups) rolled oats
  • 3 tbsp cocoa powder
  • 2 tbsp honey or maple syrup
  • Pretzel twists for antlers
  • Red candies for noses
Steps
  1. Blend the dates in a food processor until they form a sticky paste.
  2. Add the oats, cocoa and honey and blend until the mixture holds together.
  3. Roll into 16 balls with damp hands.
  4. Press in pretzel antlers and a red candy nose. Chill 15 minutes to firm up.
